Ingredients

    2 cooked chicken half breasts, sliced thin
    1 - 10oz can green enchilada sauce
    2 tbls chopped onion
    1/4 C chopped cilantro
    1 C water
    1 jalapeno, chopped (more if you like!!)
    2 cups cooked rice

Directions

Combine chicken, sauce, onion, cilantro, water and jalapeno in saucepan, simmer about half an hour, season to taste, pour over cooked rice. Serves 2
