Introduction

Ingredients

Shredded or chopped leaf lettuce
chopped tomato
drained and rinsed kidney beans
shredded cheese
sliced olives
chopped onion
chopped red bell pepper
sliced zucchini
drained and rinsed black beans
fat free sour cream
fat free 1000 island dressing
salsa
taco seasoning
Directions
In a large bowl, shred/chop leaf style lettuce, mix in chopped tomato, kidney beans, shredded cheese and olives.
In a saute pan, cook onion in pam cooking spray, add water and taco seasonings. When the onion is translucent, add bell peppers, then once softened, add zucchini (if you like it) and black beans. You could also add another veggie if it is your taste, or ground turkey or chicken breast here. If adding meat, beans can be left out if you don't like them.
Mix together sour cream, 1000 island dressing and salsa mix in a little taco seasoning. Stir everything together and put some tortilla chips on top. It makes a HUGE salad, don't plan to eat anything else! My hubby & kids love it. This is totally customizable...
