Introduction

This is a great side dish to bring in the New Year. Serve with collard greens and cornbread.

Ingredients

    2 cups dry Black-eyed Peas
    1-2 Tbsp Olive oil
    1 medium Onion-chopped
    1 Smoked Ham Hock
    2 cups Chicken Broth
    2 cups water

Directions

Soak black-eyed peas overnight. Drain water. Heat oil in large pot and saute onions. When onions are clear add black-eyed peas, water, chicken broth and ham hock. Simmer for 2 hours. Remove ham hock and cut meat off the bone. Add back to beans and stir. Serve with collard greens or spinach and cornbread.

    Incredible!
    This is the closest I've found to my grandmother's basic recipe. We have it every New Year, traditional food for good luck! Nowadays I use either canned black eye peas or if available, fresh ones in the produce section. Variations: diced tomatoes, rice, red pepper flakes, sub in smoked Kielbasa - 12/26/13
