Make a great side dish for soup or stew, or serve in place of bread. Make a great side dish for soup or stew, or serve in place of bread.

    1 cup self rising cornmeal
    1/2 cup flour
    3/4 cup milk
    1 can creamed corn


Mix everything but the milk. Add 1/2 cup of milk and mix. Add more milk if needed. You want these to be the consistency of pancakes. Cook just as you would pancakes - on a hot skillet or griddle, sprayed lightly with cooking spray.

You can add fresh cilantro, diced jalapeno peppers and diced scallions if serving these with a Mexican type dish.

  • These were easy and delicious! Really, really good straight from the oven, nice and hot. (I didn't have self-rising cornmeal, so I just added 1 1/2 Tbsp baking powder.) - 4/7/11
