Introduction
This is a favorite among my kids' friends so I always had to make *much* more than I intended for just my family. Thankfully, this is affordable and easy to do. Ingredients
-
4 medium to large potatos, baked with skins
1 pound of Ground Hamburger, uncooked
2 cups of cheddar cheese, grated
1 can Cream of Mushroom soup, condensed
1 cup of water
Salt and pepper to taste
Garlic powder to taste
Directions
Bake the potatoes until soft centered and let cool enough to handle. Scoop centers out into a large mixing bowl, leaving some on the inner edges of the potato to protect the thin skins. Arrange the skins on a cookie sheet sprayed with baking spray.
In a medium skillet combine raw Hamburger, cup of water, salt, pepper and garlic. Stir until the hamburger looks very soupy, then turn on Medium-high heat and cook , stirring frequently until completely cooked. You can adjust the seasonings to your taste (our family LOVES garlic!) When the hamburger is all cooked, you should have a fine grain cooked hamburger (not big chunks) and little to no water.
Add cooked hamburger to bowl full of potato centers, add can of Mushroom soup (NOT diluted, straight from can) and 2/3 Cheese, and mix well.
Spoon back into the potato shells evenly, topping with the last 1/3 of the cheese, and bake 30 minutes until cheese is golden brown on top.
Garnish with Sour Cream
Serves 4 (two halves each person)
