Ingredients

1 pkg. Lasagna Noodles, precooked halfway
1- 8oz container Ricotta Cheese, part skim milk.
1- 8oz pkg. Mozzarella Cheese, part skim milk.
1/4 c Parmesan Cheese
Meat Mixture:
1 lb. Chicken Breast
1 pkg. Spinach, fresh
1 c Mushrooms, sliced
1 Onion, chopped
Favorite Seasoning
Cream Sauce:
2 pkg. Low fat cream cheese
1/2 stick of butter
2 cup Milk, nonfat
6 Cloves Garlic, minced
1/4 cup Parmesan Cheese
Directions
Makes 12- 5 Servings
Preheat oven to 350 degrees.
1. Season chicken and bake in oven until done, aprox. 20 minutes. When cooled shred into pieces.
Meat Mixture:
1. Spray a pan with cooking spray, add onion and sautee until clear.
2. Add musrooms, and 3 cloves of garlic, continue to sautee until brown in color.
3. Add Chicken, stir and season if needed. Set aside.
Cream Sauce:
1. Place milk, butter, and cream cheese in a pot, place on low heat and simmer until cream cheese is melted. Stir constantly.
2. Add garlic and parmesan cheese, continue to simmer until melted.
Lasagna Layers:
1. Spray bottom of pan with cooking spray.
2. Add 4 strips of lasagna to the bottom of the pan.
3. Place ricotta cheese in tablespoon fulls along the pasta (cheese will melt so it does not need to be along the entire strip). Sprinkle with parmesan cheese.
4. Place meat mixture over cheese, pour cream sauce over meat mixture.
5. Place spinach on top.
6. Sprinkle 1/2 oz of mozzarella cheese over spinach.
7. Repeat with a second layer.
8. Top off with a layer of pasta, cream sauce and remaining mozzarella cheese.
9. Bake until cheese is melted, aprox 1 hour.
