Introduction

A rawfood keylime pie. Yum!!! Unfortunately the crust adds 360 calories per serving, so if you have a lighter crust, by all means use it! Ingredients

    CRUST
    3 cups almonds
    4 or 5 dates
    2 tablespoons coconut oil
    pinch salt
    KEY LIME FILLING
    2 avacados
    1 banana
    1 an 1/4th cup lime or keylime juice
    ½ cup mango (optional)
    ½ cup agave nectar
    ⅓ cup coconut oil

Directions

FOR CRUST
1. blend all the ingredients for the crust in food prossesor till mixture comes together , its best to start with the almonds and pulse until they are powdered
2. rub pie pan with a little oil to keep crust from sticking
3. press mixture into the pie pan, just like a gram cracker crust
KEY LIME FILLING:
1.blend all ingredients for filling until creamy and smooth
2. poor in pie crust
3. place in freezer for 4 hours, at least (if you want to put it in the freezer overnight make sure you put it in the fridge to thaw for an hour or two before serving)

Cut into 8 slices and serve!

    That sounds good. I make a similar one but with macadamia nuts and coconut flakes in the crust. It is very good. Also, no Mango, banana or coconut oil. also no oil on the pan as the macs in the crust make plenty for me! But this sounds tasty and I will try it. - 7/1/08
