Ingredients

1 cup whole wheat grahm flour
1/2 cup oat flour
2tsp baking powder
1/4 tsp salt
1/4 tsp ground cloves
1/4 tsp nutmeg
1tsp cinnamon
2/3 c splenda
1/2 tsp vanilla extract
2 Tbsp molasses
1 cup chopped pecans
1/2 c chopped dried fruit (I like apricots or dates)
2 large eggs
1/2 c applesauce
1 Tbsp canola oil
3Tbsp milk
1cup cooked, mashed sweet potatoes
Directions
Stir together flours, baking powder, salt and spices in mixing bowl. Stir in Splenda, pecans, and dried fruit.
In a seperate bowl combine eggs, applesauce, milk, vanilla, oil and mashed sweet potatoes. Stir to blend well. Add wet mixture to dry ingredints and mix just until moistened. Pour batter into greased 9x5x3 inch loaf pan. Bake at 350 degrees for about 1 hour and 10 minutes or until toothpick inserted in the center comes out clean.
Cool about 15 minutes before removing from pan.
