Ingredients
-
4 skinless, boneless chicken breast (about 1 lb), chopped into 1" cubes
2 cups chopped broccoli
2 cloves of garlic (or more if you like it), minced or pressed
1 cup chicken broth (or veggie broth, or water, or white wine)
1 cup plain fat free yogurt
8 oz whole wheat penne
Cooking spray
Directions
Fill a pot with water for the pasta, heat to boiling while saute-ing the veggies and chicken.
Spray a large frying pan with cooking spray. When it is hot, add garlic & cook about one minute, until soft.
Add chicken, cook, stirring often, until cooked on all sides, about 3-4 minutes.
Add broccoli, cook, stirring often, until crisp, about 2 or 3 minutes.
Add the broth, bring to a simmer, lower heat, cover, and cook about 10 minutes, until chicken is cooked through.
Cook the pasta according to package directions, usually about 9-12 minutes (which, coincidentally, is just as long as the chicken & broccoli cooks).
After the chicken is cooked through, add the yogurt to the sauce, and stir over very low heat until warmed through. DO NOT COOK THE YOGURT; it will get all clumpy.
Drain pasta and add to sauce.
Sever with parmesan if you like (parmesan calories not included in recipe)
