Introduction
This is an incredible soup that you would never believe used pumpkin as its base. It is very spicy, so if you like less spice, you can omit the cayenne and cut down slightly on the Shrimp and Crab Boil. I like to use Low Sodium Chicken Broth to cut down on the sodium content. Ingredients

1 medium onion, finely chopped
3 stalks celery, finely chopped
Olive Oil
2 cans chicken broth
2 cans pumpkin
Dash of cayenne pepper
4 cloves garlic, minced
1 1/2 TBSP Zatarain's Liquid Shrimp and Crab Boil
24 oz bag frozen, cooked, shelled and deveined shrimp, thawed
Salt and Pepper to taste
Dash of garlic powder
1/2 C milk
Directions
Saute finely chopped onion and celery in a small amount of olive oil until soft. Add minced garlic and saute for 1 minute. Using a whisk, add one can of pumpkin and 1 can of chicken broth and stir until smooth. Add the second can of pumpkin and the second can of chicken stock and whisk until smooth. Add cayenne, salt, pepper, Crab and Shrimp Boil and a dash of garlic powder and simmer for 30 minutes.
In the meantime, remove tails from shrimp and cut into bite sized pieces. Place in a pan with a small amount of oil and saute until just heated.
After bisque has simmered for 30 minutes, add a half cup of milk and stir. Add shrimp and simmer for 5 more minutes then serve.
