Number of Servings: 10

Ingredients

    1 lb extra lean ground beef
    1 medium-sized onion, chopped
    1 medium-sized green bell pepper - chopped
    17-oz can whole kernel corn, drained
    4-oz can mushroom stems and pieces, drained
    1 tsp salt
    1/4 tsp black pepper
    11-oz jar salsa
    5 cups dry medium egg noodles, cooked (I used whole wheat noodles)
    1 cup fat free shredded cheddar chesse

Directions

1. Brown ground beef and onion in nonstick skillet over medium heat. Transfer to slow cooker.

2. Top with remaining ingredients in order listed.

3. Cover. Cook on low 4 hours.

    This was great!! I noticed that the ingredient details shows a can of diced tomatoes which are not on the recipe ingredients (?), I think next time I'll try adding the tomatoes for something extra, but even without them, this was very tasty and filling! - 4/21/08
