Introduction

Ingredients

2 oz. enriched spaghetti noodles
1/2 tbs. extra virgin olive oil
1 clove garlic minced
1/2 cup celery chopped
1/4 cup onion chopped
1/2 cup mushrooms (any variety) sliced
1/2 cup carrot shredded
1 dash pepper
1 dash salt
1 tsp. ground ginger
3 oz. cooked shrimp
Directions
Add spaghetti to boiling water and let cook for about 8 minutes or until al dente.
While spaghetti is cooking, add olive oil to a frying pan and heat on medium-high. Add garlic and stir for about 1 minute.
Add celery and onion and stir fry until tender.
Add mushrooms and carrots and stir until mixed.
Add salt, pepper and ginger.
Continue to stir fry until well mixed.
Add shrimp being careful no to overcook (should be c-shaped, not o-shaped)
Drain pasta and add to frying pan.
Remove frying pan from heat. Stir to coat noodles, then serve.
Makes 2 - 1 cup servings
