A spin off of Applebee's Fiesta Lime Chicken with kinder numbers for those watching what they eat!!

Number of Servings: 8

Ingredients

    I did not include seasonings in calorie count. Also served with cauliflower "rice" and a black bean/corn blend.
    2# boneless, skinless chicken breast
    72 baked (low fat) tortilla chips

    Marinade:
    1 cup water
    1/3 cup teriyaki sauce
    1/2 lime, juiced
    3 cloves garlic
    1/2 teaspoon salt
    1/4 teaspoon ground ginger
    (marinate chicken for a few hours or overnight)

    Dressing:
    1/4 cup low fat mayo
    1/4 cup low fat sour cream
    2 Tablespoons Salsa
    1 teaspoon blackening spices
    1/4 teaspoon parsley
    1/4 teasoon hot sauce
    1/8 teaspoon dried dill weed
    1/8 teaspoon cumin
    1 cup shredded 2% mexican cheese blend
    1/8 teaspoon ground chipotle pepper (optional)
    1/8 teaspoon crushed red pepper flakes (optional)
    3-4 drops El Yucateco (optional)
    (The optional ingredients are for those who like to spice things up a bit!)


Directions

Grill marinated chicken until done (internal temp of 165). Brush dressing while cooking, add cheese at end until melted. Serve chicken over crumbled tortilla chips (or on top for a fun twist). Nutritional info based on 4 oz serving (8) using all of dressing. Can serve with cauliflower "rice" or real rice for those not counting carbs! The black bean/corn mix is also a great addition!
