Ingredients

    1 egg
    1 1/2 cup wheat bran
    1 cup non-fat milk
    1/2 cup unsw. apple sauce
    1/3 cup brown sugar
    1 cup whole wheat flour
    1 tsp baking soda
    1 1/2 tsp baking powder
    1 cup fresh blueberries

Directions

Mix wheat bran and milk and let stand for 10 minutes.

In a seperate bowl mix apple sauce, egg, sugar and vanilla. Then beat in bran mixture.

Sift dry ingredient together and stir into mix.

Fold in blueberries.

Bake at 375F for 15 to 20 minutes.

    Really really good. I sue whatever berries I have on hand. These are great to take to work for amid-morning snack. - 7/15/13
