Introduction

My husband enjoys fishing off Catalina Island here in California & frequently brings home skipjack. It is a tuna...but the fishier tasting kind...so not the best eats. HOWEVER, I have discovered that we all LOVE it for tuna sandwiches! If you have a fisherman in your family, give this a try. It is a sandwich that my fussy 4yr old daughter devours! Ingredients

    1 Medium Fish(2-3lbs) Pacific Skipjack, Bonito Tuna
    6 Tbsp Reduced Fat Mayonnaise
    2 Tbsp Sweet Pickle Relish


    2 tsp mustard
    lettuce
    4 slices tomatoes

    8 slices bread (not included in nutritionals as they are all soooo different!)

Directions

Cook the fish a day in advance. I wrap the whole fish (head, tail & innards removed) in foil that has been lightly sprayed with olive oil & then cook in the crockpot (on a small rack, or foil balls, low temp for 8hrs) or on the grill (on medium heat for approx 10-15min per side for room temp fish)...both worked great. Check for doneness & CHILL the fish in the fridge. (I do it overnight)

Cut fish in 1/2 length wise removing dark meat & bones. Gently scrap away from skin & flake the meat. Add in bowl with mayo & relish. Start small & add as desired taste is achieved.

Spread 1/4 tsp mustard on one side of each slice of bread.

Divide meat into four equal sized portions.

Make 4 sandwiches with greens, slice of tomatoe & tuna. Enjoy!
