Ingredients
-
1 lb dry beans or 2 cans of beans
1 lb ground beef
1 lb frozen corn or 2 cans corn
1 can sliced olives
2 cans Ro-Tel tomatoes with chiles
2 packets taco seasoning
2 packets dry ranch dressing mix
1 qt beef broth
Directions
If you use canned beans, you can do this in the crockpot or soup pot. If you use dry beans, but soak and cook them first, you can do the same. If you use dry beans, you can do this in the pressure cooker!
Brown ground beef, then add 1 packet taco seasoning. Add to pot. Add everything else, and stir to mix. If the broth doesn't look to be enough liquid, add more broth or water. If you are using dry beans in the pressure cooker, you need to have enough liquid to cover everything, but be sure to not overfill your pot.
Cook on high in the crockpot 2-3 hours. Low in the crockpot 4-6 hours. On the stove, simmmer gently in a covered pot until done. In the pressure cooker, cover with lid as your pot's instructions state, and bring up the heat til it jiggles. turn the heat down til just jiggling and cook for 1 and 1/2 hours.
