Ingredients

    2/3 cup sliced carrot
    1/2 cup diced onion
    2 garlic cloves, minced
    3 cups fat-free broth (I used chicken)
    1 1/2 cups chopped green cabbage
    1/2 cup green beans
    1 tbsp tomato paste
    1/2 tsp dried basil
    1/2 tsp dried oregano
    1/4 tsp salt
    1/2 cup chopped zucchini

Directions

In a large, oiled saucepan saute the carrot, onion, and garlic over medium low heat until softened, about 5 minutes. Add broth, cabbage, beans, tomato paste, basil, oregano, and salt. Bring to a boil. Lower heat and simmer, covered, about 15 minutes. Serve hot.

    I love this soup it is one of my favorites!!! Instead of the paste I use a can of Del-Monte or Hunts chopped tomatoes and ¼ cup tomatoes sauce. - 8/25/10

    Very tasty vegetable soup and very low calorie! One of my favorite recipes. One note: the chopped zucchini goes in at the end after it's boiled, and cooks just a few minutes until somewhat soft. Don't overcook the zucchini or it gets mushy. - 12/11/09

    I love this recipe! I play with the spices a little each time I make it so I don't get bored. I usually make a large pot, dutch oven, full. Also, I have started adding a package of edamame (soy beans) for added protein. - 1/29/10

    This soup is wonderful! Because it has so few calories and is such a filling soup I make up large batches and eat it when I really, really need something to eat but don't have many calories left for the day. - 7/14/09
