Ingredients

    4 cups Swanson's Natural Goodness Chicken Broth
    2 thin slices fresh ginger or 3/4 tsp ground ginger
    2 cups diagonally sliced fresh asparagus
    1/3 cup sliced green onions, including tops
    3 Tbsp rice vinegar or white wine vinegar
    1/4 tsp crushed red pepper
    8-12 oz surimi (imitation crab)

Directions

Bring ginger and chicken broth to a boil in a large saucepan. Add asparagus, green onions, vinegar and crushed red pepper. Simmer 5 minutes or until asparagus is crisp tender. Add surimi and simmer 5 minutes longer or until seafood is hot. If using fresh ginger, remove and discard. Serve soup hot.
