Introduction
These are make without a nut meal of any kind, so they taste more authentic to me. I use Vanilla protein powder as that's what I had, but feel free to experiment. This makes 2 small pancakes or 1 large (7-8") pancake. These are make without a nut meal of any kind, so they taste more authentic to me. Ingredients
-
2 tbsp protein powder
3/4 tsp baking powder
1 tsp cinnamon
dash nutmeg
dash ginger
1 egg
1 tsp vegetable oil
1 tbsp of water
Directions
Mix all ingredients together in a bowl. Stir very well to ensure all the egg and protein powder are mixed.
Cook in greased (spray with cooking spray) fry pan on medium. It is thick batter, so I flatten out the batter a bit to the size pancake I want. Flip when pancake gets a dryish looking film on top. These will bubble on the edges, but not all the way through.
Serve with sugar free maple syrup (I use Walden Farms) to be truly low carb.
Enjoy!
