Introduction

Ingredients

    1 cup dry white Navy Beans
    1 onion chopped
    1/4 c white wine
    6 fresh parsley sprigs
    1 bay leaf
    1 fresh thyme sprig
    2 garlic cloves finely chopped
    3-4 yukon gold potato
    6 cups cabbage sliced into thin strips like noodles.
    1 tbls olive oil

Directions

Soak the beans for at least 8 hrs. Drain in a colander.
With olive oil, sate onion and garlic. Add wine and simmer for about 5 min.
Add beans, and all fresh herbs. Add chicken stock and water. Cook until beans are almost done 40-50 min.
Peel and cut potatoes into 1 inch pieces.
Add potatoes and cabbage into soup, cook until tender.
Salt and pepper to taste.
