Introduction
This variation on Italian Style Wedding Soup is yumm-o! Even my picky 12 year old can't get enough. The perfect pot of Sunday Soup. (I love to make soups on Sunday and our family eats at their leisure. For dinner I add a 50/50 SPring Mix and Beet Salad with Balsamic & Olive Oil Dressing. 1Ib Ground Turkey 7% Fat
3 Tbsp chicken broth
4 C Water
4 Medium Carrots, with skin, washed & diced
2 Med Celery Stalks, washed & diced
1 C uncooked Brown Rice
1 sm pack frozen Spinach
Dash black pepper
1 Tsp Italian Seasoning
Directions
Makes 10 - 1 1/2 cup servings.

Brown meatballs in non-stick skillet with NO oil.
Add stock, celery, carrots, spinach, meatballs & rice to LG stock pot.
Bring to a boil and add rice, boil for 1 hour or until rice is soft.
Serve alone or with 50/50 Spring mix salad with beets and balsamic/olive oil dressing.
