Introduction

This variation on Italian Style Wedding Soup is yumm-o! Even my picky 12 year old can't get enough. The perfect pot of Sunday Soup. (I love to make soups on Sunday and our family eats at their leisure. For dinner I add a 50/50 SPring Mix and Beet Salad with Balsamic & Olive Oil Dressing. Ingredients

    1Ib Ground Turkey 7% Fat
    3 Tbsp chicken broth
    4 C Water
    4 Medium Carrots, with skin, washed & diced
    2 Med Celery Stalks, washed & diced
    1 C uncooked Brown Rice
    1 sm pack frozen Spinach
    Dash black pepper
    1 Tsp Italian Seasoning

Directions

Makes 10 - 1 1/2 cup servings.

Add Pepper & Italian Seasoning to Turkey and form 1" round meatballs.
Brown meatballs in non-stick skillet with NO oil.
Add stock, celery, carrots, spinach, meatballs & rice to LG stock pot.
Bring to a boil and add rice, boil for 1 hour or until rice is soft.
Serve alone or with 50/50 Spring mix salad with beets and balsamic/olive oil dressing.

    I like these kind of recipes. They are light and satisfying. I made mine with beet greens from my garden instead of spinach (that's what I had). I also added mushrooms. - 8/24/09

    Loved this- I substituted 3 cups chicken broth and 1 cup water for more flavor (adjuster calorie count)-really great. thanks for sharing - 3/21/09
