Ingredients

    1 Boneless chicken filet, cubed (not thinly sliced)
    Low fat or fat free shredded cheese of your choice
    1 Red Onion, diced
    1 Tbsp. of minced Garlic
    1 nice size sweet potato, peeled and chopped
    Chicken Broth (about 1/2 cup or so)
    1 Bell Pepper of your choice (you can can add another pepper of another color if you'd like. Can be 1 red and 1 green)
    Olive Oil
    1 can of corn (optional)
    Salt and Pepper

Directions

Drizzle olive oil in a large pan. Put in cubed boneless chicken and cook thoroughly. Stir in chopped onions and minced garlic. Let it cook for about two minutes. Add the sweet potatoes and a dash of chicken broth (about 1/4 cup). Cover and let it cook for about six minutes or until the sweet potatoes are tender. Add the black beans, peppers and corn. Add salt and pepper to taste. Put in another dash of chicken broth and cover and let it cook for about five minutes. When finish, serve and drizzle some shredded cheese on top.

This dish is GREAT with steamed Brown rice!
