I leave the pork on the side rather than mixing it in, because my daughter is a vegetarian, and I also do tofu the same way for her. I have also made it with chicken. Ingredients

    2c carrot matchsticks
    2c celery matchsticks
    2c zucchini matchsticks
    2c green pepper matchsticks
    1 large onion cut in thin slivers
    3-6 cloves garlic minced (to taste)
    minced gingerroot to taste
    1 lb boneless skinless meat (pork chops, or chicken cutlets) or 1 pkg superfirm tofu
    .25c soy sauce ( or so, to taste)

Directions

Chop all vegetables into matchstick size pieces, set aside. Cut meat into half inch strips. Heat oil in skillet or wok add meat or tofu and garlic and ginger . Cook 5-10 minutes(if you want to keep the meat on the side, use a separate pan for the veggies.). add in the onions, carrots, and celerycook til onion starts to become transparent. add the peppers, and zucchini. cook 5 minutes, drizzle with soy sauce. Serve hot garnish with sesame seeds
