Ingredients

Lentils, 1 cup cooked
Sunflower Oil, 1 tbsp
Onions, raw, 1.5 cup, chopped
Brown Rice, medium grain, 1 cup cooked
Curry powder, 1 tsp (less or more depending on your taste)
Peas, frozen, 0.5 cup
Hard Boiled Egg, 3 large Chopped
Parsley, 2 tbsp
Salt, 1 dash
Pepper, black, 1 dash
Directions
Mix together cooked lentils and rice and set aside.
In a pan heat oil and add Onion with dash of salt(the salt will keep them from browning). Cook Onion until soft. When Onions are soft add Curry Powder to taste and stir around for 1 min. Add in Peas and Parsley, cover for 5 mins while the peas cook. Add mixture of Lentils and Rice to pan and combine all for 10 min for ensure all is warmed thru. Arrange in Dish with Eggs spread around. Salt and Pepper to taste.. Enjoy
I also add on the side Mango chutney as a spicy/ sweet sauce.. Yummy
