Introduction

Number of Servings: 6

Ingredients

    1 lb lean ground turkey
    2 cups cooked brown/wild rice blend
    2 tbsp BBQ sauce
    1 large egg
    3 slices pepper jack cheese
    3 slices cheddar and/or colby jack cheese

Directions

Mix everything but the cheese. Press half the mixture into a small casserole pan (e.g. 11" x 7.5"). Lay out cheese in a layer (I break the slices into 4 pieces each and make a checkerboard pattern with it). Put the other half of the turkey/mixture on top and press. Bake at 350 for 20 minutes. Let stand 5 minutes. Cut loaf into 6 servings. Enjoy!

(Nutritional information is calculated using regular cheese, but you can use reduced fat cheese to reduce the fat grams.)
