Ingredients

2 lbs. dried red beans
1 ham hock (or any kind of cooking ham)
1 large bell pepper, chopped
1 large onion chopped
3-4 celery stalks, chopped
4-5 cloves of garlic, minced
1 can chicken broth (optional)
thyme, parsley, crystals hot sauce, salt and pepper to taste.

Directions
Should make about 16 servings (somewhere between a 1/2-1 cup)
soak beans over night or bring to a boil then turn off and let soak for an hour. Drain. Add all ingredients (except seasonings and cooked rice)to a large pot. Cover beans with water so that there is about an 1/2 inch to an inch past the beans . Bring to a simmer and cook for hours. This was a dish that was intended to be left on all day while people did their laundry, you can not over cook them! If you do not have enough liquid add more when needed. Beans should turn out creamy and well done. Add seasonings before you start to serve until it tastes how you want. Leave out extra hot sauce for those who like extra heat! Serve over rice. The calories for the rice is factored in for 1/2 cup of rice per serving.
