Introduction

Number of Servings: 10

Ingredients

    3/4 c. All-purpose flour
    3/4 c. White Wheat Flour
    3/4 c. Oat Bran
    2 tsp. Baking soda
    1 1/2 tsp. cinnamon
    1/2 tsp. salt
    2 1/2 tsp. ground ginger

    1/2 c. white sugar
    1 1/4 c. soymilk
    1/3 c. Vegetable Oil
    1 tsp. vanilla

    1/2 c. Crystallized ginger, chopped
    1/2 c. Golden Raisins

Directions

Standard operating muffin procedure:

Preheat oven to 400 degrees F.

Mix dry and wet ingredients separately, combine, spoon into muffin cups 3/4 full, cook at 400 for 20-22 mins. Enjoy!

Yeilds approx. 10 muffins

    Doubled the batch. Used 1% milk. Added in a bit of ground flaxseed. Very healthy muffin overall. - 2/1/11
