1.5 lb Boneless, skinless chicken breast
1 can (14 ounces) tomatoes, drained & diced
1 jar (14 ounces) artichoke hearts
1 small onion, chopped
1 cup nonfat chicken broth
.25 cup dry white wine
1 tbs quick-cooking tapioca
1 tsp curry powder
1 tsp dried basil
1 tsp dried thyme
.5 tsp salt
.5 tsp black pepper
Directions
combine chicken, tomatoes, artichokes, onion, olives, broth, wine, tapioca, curry powder, parsley, basil, thyme, salt and pepper in the Crock Pot slow cooker. Mix thoroughly.
Cover and cook on LOW for 6-8 hours, or HIGH for 3.5-4 hours.
