Introduction
Makes about 8 - 3/4 cup servings.This is so delicious. Great for pot lucks and an awesome way to get your family to eat Cauliflower...even picky cauliflower haters love this dish. It is also good the next day and reheats well. Tastes just like stuffed baked potatoes. I have taken this to lots of pot luck dinners and there is never any leftover. Makes about 8 - 3/4 cup servings.

Ingredients

1 large head of Cauliflower broken up into small pieces
4 Tbsp. cream cheese (I used herb and chive or garlic it was awesome) or you can use fat free cream cheese but it’s not as good
4 Tbsp. sour cream or fat free sour cream
1/2 cup shredded cheddar (or any hard cheese) use low fat too if you like – 4 cheese parmesan shredded italiano blend is good and lower in fat but still melts well.
2 tablespoons butter or 1 Tbsp. fat free butter or nothing at all (I didn’t notice a difference and will reduce the calories further)
2 chopped green onions or more if you like (save a few for the top)
3 to 5 chopped cooked bacon strips. (or about 6 TBSP of Hormel or Maple Leaf real bacon bits)
Directions
One head of cauliflower steamed for 15 minutes and drained. (I used a large head). Then return to pot to get rid of all excess water. Cook for about 1-3 minutes more.
In a bowl with electric beaters, add the following ingredients (you can use a food processor too for a finer texture)
Puree all together. (Keeping some cheese, onions and bacon bits for the top.)
Place in oiled or (Pam sprayed) baking dish and top with more cheese and bacon bits. Bake 350 degree for at least 30-40 minutes or more. Til bubbley and golden on top.
Add salt and pepper to taste.
Reheats well and lasts a few days in the fridge.
