Introduction

Ingredients

    2 eggs
    1/2 cup unsweetened applesauce
    1/4 cup vegetable or canola oil
    1/4 cup packed brown sugar and 1/4 cup Splenda OR 1/2 cup unpacked Splenda Brown Sugar Blend
    1 teaspoon vanilla extract
    3 bananas, mashed
    2 cups whole wheat flour
    1.5 teaspoon baking soda
    1 tablespoon ground cinnamon
    1 cup frozen mixed berries

Directions

1. Preheat the oven to 375 degrees F (190 degrees C)
2. Grease loaf pan
3. Partially defrost berries (about 30 seconds in the microwave) and set aside; cut any very large berries (I use kitchen scissors in the bowl...tidy)
4. In a large bowl, whisk together the eggs, applesauce, oil, sugar/Splenda, vanilla and bananas
5. Combine the flour, baking soda and cinnamon
6. Stir flour mixture into the banana mixture until moistened
7. Stir in the berries until evenly distributed
8. Pour batter into pan
9. Bake for approximately 50 minutes in the preheated oven, or until the top springs back when pressed lightly. A cake tester should come out clean when inserted in the center if the fruit is avoided.
10. Cover the pan with tin foil immediately after removing from the oven and let the loaf cool while covered. This is the secret to a moist whole wheat loaf.
