1.5 cups cooked rice
1 10.5 oz. black beans drained and rinsed
1/3 cup barbecue sauce
1/4 cup water
2 blocks of tofu cut into 1/2 inch pieces (4 cups)
Directions
1. In a 2 quart sauce pan, stir together the rice and beans. Add the barbecue sauce and water. Stir until combined. Cook over medium heat, stirring occasionally. 10 minutes or until heated through.
2. Stir in the tofu and cook until heated through, about 2 minutes longer
