Introduction
I decided tomato soup needed a little kick-up. This recipe includes some heavy cream for richness and water to balance that out, but half of the liquid in it is skim milk. You could sub out the cream for more skim milk instead to reduce calorie and fat count.This soup also tastes awesome with a dallop of sour cream (and a bit of balsamic if you're so inclined). Ingredients

2 10.75 oz cans condensed tomato soup
1 14 oz can Hunts Diced Tomatoes (including liquid)
21 oz of liquid - Try 11 oz skim milk, 5 ounces heavy cream, and 5 ounces water
Directions
In large sauce pan empty contents of diced tomato can. Break up the tomatoes more, if desired, with a potato masher or an immersion blender to completely eliminate chunks. Add two cans of condensed tomato soup. Add choice of liquid using the soup cans to measure (as per directions on soup can). Stir. Over medium to medium-high heat bring soup to desired temperature, stirring occasionally.
Try topping with: dallop of sour cream, sprinkle of cheese, dash of balsamic, or croutons.
Yields about 7-8 1 cup servings.
