Ingredients

    Turkey, Ground turkey, 93% lean, 20 oz
    Onions, raw, 1 cup, chopped
    Green Peppers (bell peppers), 0.5 cup, chopped
    Peppers, sweet, red, fresh, 1 cup, chopped
    Beans, red kidney, 2 cup
    Canned Tomatoes, 2 cup
    Olive Oil, 1 tbsp
    Corn Meal, 1 cup
    Water, 3 cups
    Cheddar or Colby Cheese, Low Fat, 1 cup, shredded (remove)

Directions

Stir cornmeal in a bowl with 1 cup cold water. Bring remaining 2 cups of water to a boil with 1/2 tsp salt. Add cornmeal mix, stiring constantly. Cook on low for 5-10 min. while stiring until thickend. Pour into a Rectangular pan, rinsed with water.
Saute Meat, onion and pepper in oil until tender. Add Beans and Tomatos, season with Salt, Pepper, Oregano, Chili Powder, Cumin and Coriander. Pour in the bottom of a second rectangular pan the same size as the first. Sprinkle with cheese and invert layer of corn-polenta on top. Bake in a 350 deg. oven for 1 hr.
