Gotta love roasted vegetables! Gotta love roasted vegetables!

Ingredients

    2 medium zucchini (cut in chunks)
    2 small red potatoes (Diced small)
    1/2 red pepper (Diced large)
    1 medium onion (Diced)
    1 tblsp minced garlic
    1.5 tblsp olive oil
    dried or fresh basil
    salt & pepper
    1 tblsp grated Asiago cheese (optional)



Directions

Toss all ingredients except cheese in a bowl.
Spread on a parchment lined baking sheet & roast at 375 (in a convection oven) or 400 (in a standard oven) until potatoes are tender. Spinkle cheese over in last few minutes.
