Introduction
Based on the low fat vanilla cupcakes in Vegan Cupcakes Take Over the World by Isa Chandra Moskowitz and Terry Hope Romero. I've made a few changes to decrease the fat and sugar (and make them chocolate). Ingredients

1/2 c soy yogurt
2/3 c soy milk
1/4 c + 2 tbsp applesauce
1 tbsp oil
1/2 c sugar
2 tbsp agave nectar
1 1/2 tsp vanilla extract
1/2 c all-purpose flour
1/2 c whole wheat pastry flour
1/4 c cocoa powder
2 tbsp cornstarch
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Directions
Preheat the oven to 350F/175C and line a muffin pan with cupcake liners.
In a large bowl, whisk together yogurt, soy milk, applesauce, oil, sweeteners, and extracts. Sift in the dry ingredients. Fill liners three quarters full. Bake 22-24 minutes or until a knife or toothpick inserted in the center of one comes out clean. Transfer to a cooling rack to cool completely.
Serve with fresh fruit or drizzled with icing.
