Ingredients

1-1/4 lb ground turkey
1 link hot Italian turkey sausage (about 4 oz.)
1 small onion, chopped
2 cloves garlic, minced
1 can no salt added diced tomatoes, undrained
1-1/4 cup water
1 cup spaghetti sauce (Ragu, Classico, etc.)
1 tsp dried basil leaves
1 tsp dried oregano leaves
2 small zucchini, sliced (about 2 cups)
8 large fresh mushrooms, sliced (about 2 cups)
1/2 of 10 oz. pkg of frozen spinach
2 cups whole wheat ziti or penne pasta, dry
1 cup part skim ricotta cheese
1/4 cup parmesan cheese, shredded
1/2 cup reduced fat (2% milk) mozzarella cheese, shredded
Directions
In a large skillet, brown ground turkey, turkey sausage, onions, and garlic. Drain or blot any excess fat.
Add tomatoes, water, spaghetti sauce, basil, oregano, mushrooms, zucchini, and spinach. Stir and bring to a simmer.
Stir in uncooked pasta. Bring to a boil.
Reduce heat, cover and simmer for 25 minutes or until pasta is tender, stirring occasionally.
Combine ricotta and parmesan cheese. Drop cheese mixture by rounded tablespoons onto pasta mixture. Gently spoon sauce mixture over cheese.
Spread mozzarella cheese over the surface. Cover and cook for 5 minutes more.
Makes 6 generous servings.
