Introduction

My mother didn't enjoy the typical tomato sauces so I created this for her. My mother didn't enjoy the typical tomato sauces so I created this for her.
Number of Servings: 2

Ingredients

    Sliced or diced onions
    1 to 2 cloves garlic (to taste but optional)
    1 to 2 tomatoes (any type)
    1/2 to 1 Tablespoon Olive Oil (I use EVOO)

Directions

Slice or dice onions, tomatoes and garlic. Heat pan to medium-high heat and add olive oil. Add onions and allow to cook for 3 to 5 minutes; longer if you want more carmelization. Then add garlic and cook for 1 to 2 minutes. Finally add tomatoes and cook for additional 2 to 3 minutes. Serve over any cooked pasta and add a little cheese for some protein. This recipe is for about 2 servings. Increase onions and tomatoes for more servings. A fun recipe to play with.
