Number of Servings: 4

Ingredients

    1.5 cups breadcrumbs
    zest of 2 lemons
    juice of 2 lemons
    1 tsp salt
    3 lbs. chicken breasts
    1/4 cup soy sauce
    2 tbsp honey
    1 tbsp ground ginger

Directions

Mix together lemon zest, breadcrumbs, and ginger in a plastic baggie. Cut chicken into tenders and shake. Place on baking sheet and bake at 400 degrees for 25 minutes.

While chicken cooks, mix together soy sauce, honey, and lemon juice. Use as a dipping sauce for the chicken.

Makes 4 servings.

    This sounds delicious. I can't wait to make it. I think there is an error on the chicken though. The recipe is calculated on 3 servings (or 12 ounces) of chicken, but the recipe says 3 pounds. In any case, I will be trying it using the 12 ounces. I love Lemon Chicken ! Maybe low-sodium soy sauce. - 1/19/09
