Introduction

Can be made as an omlette or fritatta. Created after making omlettes for my friends kids and there not being enough eggs left for the adults so we put it in a dish and hey presto. Ingredients

    4 large Eggs
    1 Cup of chopped Green Peppers
    1 Cup of chopped Red Peppers
    1 Cup of chopped Yellow Peppers
    1 Cup of tinned Sweetcorn (about 165g when drained)
    1 Cup diced Onion
    1/4 Cup grated Cheddar Cheese (or alternative)

Directions

Serves 2 as a main meal or 4 as part of a main meal, serve with salad.

1. Pre-heated oven to Gas Mark 4, 180C. or 350F

2. Chop all of the peppers and onion

3. Beat the eggs and add peppers and onion

4. Pour mixture into oven proof dish

5. Place in oven for about 10-15 minutes, then sprinkle cheese on top.

6. Place back in oven and keep checking as times will be different dependent on size of dish and type of oven.

7. Check the frittata is cooked through by puting a sharp knife down the middle.

8. Slice and serve with salad.

9. Enjoy
