Ingredients

1/2 cup plain dried bread crumbs
1/4 cup all purpose flour
2 Egg whites
1/4 cup low fat milk
2 (1/4 lb) veal cutlets
2 tsps vegetable oil
Directions
1. Place the bread crumbs and flour in 2 separate shallow dishes. In a third shallow dish, beat the egg whites and milk. One at a time, dip the cutlets into the flour, shaking off any excess; dip into the egg white mixture, then into the bread crumbs, pressing the crumbs to coat.
2. In a large nonstick skillet, heat 1 teaspoon of the oil. Cook one cutlet until golden brown, about 3 minutes, then turn and cook 1-2 minutes longer. Transfer to a plate and keep warm. Repeat with the remaining teaspoon of oil and cutlet.
