Number of Servings: 4

Ingredients

    1 small Zucchini, cut lengthwise into fourths and then cut crosswise into 1/2-inch slices.

    1 cup frozen shelled Edamame, thawed

    1 medium Tomato coarsely chopped

    2 tsp chopped fresh Basil Leaves (1/2 tsp dried)

    1/4 tsp Garlic Salt

    1/8 tsp ground Pepper

    1 Tbsp shredded Parmesan Cheese

Directions

1. In 2-quart saucepan, heat 1/4 cup water to boiling over medium heat. Add zuchini and edamame and simmer 3 to 5 minutes until veggies are crisp-tender. Drain and return to saucepan.


2. Stir in tomato, basil, garlic salt and pepper. Cook for about 1 minute or until tomato has been heated through.


3. Place in serving dish and sprinkle with cheese.
