Introduction

this is a remake of someone else's sparkpeople recipe--POLARG--theirs was with beef, so I converted it for chicken because I didn't have any beef . Ingredients

    1 C. Unsweetened Pomegranate Juice
    2 C. chopped Onions
    5 clove Garlic, minced
    2 tbsp Maple Syrup
    1 14.5 oz. can fire roasted diced tomatoes
    1 tsp Cinnamon, ground
    0.25 cup packed Raisins
    0..25 C. balsamic vinegar
    2 tsp Rosemary, dried or 1 sprig fresh
    2 tsp Marjoram, dried
    1 tbsp Basil, dried
    2 bay leaves
    2 tsp Thyme, ground

Directions

Heat 2 t. olive oil in a heavy skillet. When oil is hot, add onion and garlic.
Add chicken to the crock pot and stir.
In a medium bowl combine all other ingredients. Pour over chicken and stir. Cover and cook High 4 hours, or Low 6-8 hours. Serve over mashed potatoes.
