Ingredients

* 4 Skinless Chicken Breasts
* 4 Meduim Carrots
* 1 Large Mango
* 1 Medium Apple
* 1 Medium Banana
* 1 Medium Onion
* 1tbsp Extra Light Olive Oil
* 1-2tbsp Curry powder
* 1pt Water
* 2tbsp Sour Cream
Directions
Prep:
Cut chicken into 2" cubes. Peel and cut all fruit and veg. Grate the onion or dice it into small cubes, cut carrots and bananas into discs and cut the apple and mango into small cubes.
Cooking:
Boil the water in a pan with 1tsp or sugar and salt, and add the carrots, cook those for around 10-15 minutes, or until they are soft.
Warm a pan with the oil and brown the chicken.
Once browned add the onion and fruit to the pan and stir in well, then add the carrots and water to the pan.
Stir until everything is evenly mixed and make a well in the middle to add the curry power to. Add this to taste (I use 1-2tbsp of curry paste usually). Stir continually until the curry is mixed throughout the ingredients.
Now there is nothing more to do that wait and stir occasionally when the oil raises to the top. The curry will thicken as it cooks and the banana and onion will disintegrate into the mixture.
Once the curry is done, turn off the heat and stir in the sour cream. Now your curry is ready to serve! enjoy with some healthy steamed brown rice, baked potato or anything you like!
