Introduction

I created these muffins as an alternative to store bought granola bars and snacks for our teenager. Now her friends and team mates all want them! I created these muffins as an alternative to store bought granola bars and snacks for our teenager. Now her friends and team mates all want them!

Ingredients

    Ingredients:
    1 Cup Flour
    1 cup Quick oats
    1/2 cup Old Fashioned Oats
    1/2 tsp Baking Soda
    1 tsp Baking Powder
    1/2 tsp Salt
    2 Eggs
    1 cup Semisweet chocolate chips
    1/3 cup canola Oil
    1/2 cup water

Directions

Combine all dry ingredients in mixing bowl. Separately, mix the eggs, water and oil together. Add the liquid ingredients to the bowl with dry ingredients and mix by hand until well moistened. Add the chocolate chips and mix well. Spoon batter into 12 muffin tins with paper liners. Bake for 20 minutes at 400 degrees.

    Very Good
    I used whole wheat flour and no quick oats (all the old-fashioned ones) and I found these very filling. Kind of like a granola bar in muffin form. They have a bit of sweetness from the chocolate chips, without any added sugar. Very good, will be making these again. - 5/20/12
