Introduction

My family loves this recipe. I took an old favorite and made it as low fat as possible. It started out at about 30 grams of fat per serving, but using low fat or no fat substitutes does not sacrifice the flavor. My kids like it because they get to dip the chips. I sometimes add corn to trick them into eating their veggies! My family loves this recipe. I took an old favorite and made it as low fat as possible. Ingredients

    1-2 pounds of ground beef
    1 small onion- chopped
    1 (10oz) can fat free or low fat cream of mushroom soup
    1 (~14 oz) can of red enchilada sauce-mild
    1 (4oz) can mild diced green chiles
    1 cup of fat free sour cream
    2 cup tortilla chips, break half into bite size-ish pieces
    1 cup any cheese
    Cilantro, as much as you like

Directions

Brown ground beef and onion until cooked thoroughly. Add 1 can each of mushroom soup, red enchilada sauce, mild diced green chiles, and 1 cup of sour cream. Stir while bringing to boil. Add 1 cup of broken tortilla chips and put a lid on the pot for 1 minute to soften. Add 1 cup of cheese and put lid on to melt. Serve with a garnish of cilantro and sour cream and use reserved chips for dipping.
Makes enough for a family of 4 and lunch the next day.
