Ingredients

    1/8 teaspoon black pepper
    1 tsp dried sage
    1 pound boneless center-cut pork tenderloin chops (about 4 ounces each)
    1 teaspoon olive oil
    1/3 cup apricot-pineapple jam
    1/3 cup sweet white wine
    1 tsp fresh minced ginger

Directions

Divide the results in 4 equal portions to get the right serving size.

1. Rub pork loins with black pepper and sage.
2. Heat olive oil in a large non-stick pan over medium-high heat and add pork loins.
3. Cook about 3-5 minutes on each side or until browned. Remove pork from pan and keep warm.
4. Combine jam, wine and ginger in a small bowl and stir well with a whisk. Add mixture to pan and simmer about 4 minutes or until thickened.
5. Return pork loins to pan and cook 1-2 minutes to coat

Serve with mashed potatoes, brown rice, or a vegetable saute.

    I enjoyed this it made my tastebuds wake-up! I used pineapple at the time because it was all I had on hand and it tasted yummy! - 9/19/07
