Number of Servings: 4

Ingredients

    1 tsp paprika
    3/4 tsp dill weed
    1/2 tsp caraway seed
    1/2 tsp onion powder
    1/2 tsp garlic powder
    4 boneless pork loin chops, ~4 oz each
    Vegetable oil spray
    1/2 cup water
    1/2 cup low-fat sour cream
    1/4 tsp salt
    2 Tbls finely chopped scallions

Directions

In a small bowl, stir together the rub ingredients, items 1-5. Rub 1/2 mixture on one side of pork.

Lightly spray a large, non-stick skillet with Pam. Heat over medium high heat. Reduce the heat to medium. Place pork in pan, seasoned side down. Cook for ~5 minutes. Season the other side and turn. Cook an additional 5 minutes.

Remove chops from pan and set aside. Add water to skillet, and loosen browned bits. Reduce liquid to 1/4 and then lower heat to low. When boiling has stopped, whisk in sour cream and salt. Stir until smooth and pour over pork. Top with chopped green onions, for garnish.

Serving is one chop with 3 Tbls sauce.
