Ingredients

rice - cooked - brown or white - 4 cups
peas - cooked - 1 cup
corn - cooked - 1 cup
mushrooms - raw - sliced - 2 cups
red onion - diced - 1 cup
celery - diced - 1/2 cup
carrots - raw - diced - 2 cups
cauliflower - cooked - chopped - 2 cups
yogurt - plain - 0% fat - 400 grams/1-3/4 cups
tuna - flaked in water - 2 cans/240 grams
mozza cheese - partially skim - shredded - 1 cup
8 egg whites or 1 cup of egg substitute like egg beaters.
salt and pepper to taste
soy sauce - 4 tsp
Directions
Makes 12 large heaping muffins.
Preheat Oven to 375 degrees F
Beat Egg Whites until stiff.
In a large bowl, hand mix all other ingredients together. Add the beaten egg whites into the mixture just to evenly distribute. Spray muffin tins with Pam. Fill large muffins tins heaping full and shape tops like muffins. Bake for approximately 45-55 minutes until tops are nicely browned.
Serve immediately.
