Ingredients

4 boneless pork chops
1/2 onion sliced
2 cups cooked brown or wild rice
1 can diced tomatoes
1/4 cup chicken broth
salt and pepper to taste
garlic powder
Directions
Preheat oven to 350 degrees.
Spread cooked rice in the bottom of a rectangular baking dish. Spread onion slices on top of the rice. Season the pork chops with salt, pepper and a little garlic powder. Place pork chops in one layer on top of onions. Pour can of diced tomatoes on top of the pork chops and spread evenly. Pour the chicken broth around the edges. Bake until pork chops are done. Approximately 40 minutes. Serves 4. Each serving will consist of one pork chop and approximately 1/2 cup rice.
