Ingredients

    2 lb chicken - boneless skinless - cubed
    3/4 cup Cashews
    3-4 green onions
    3 cups chicken broth
    2 tbs corn starch
    2 tbs soy sauce
    ½ tsp sugar
    Pepper & Pepper to taste
    3 cups of steamed rice.

Directions

Season chicken with a bit of salt and pepper and then fry in 1 tbs of olive oil.

For the sauce: Mix chicken broth, corn starch, soy sauce, sugar and pepper. Cook until thickened.

Serve chicken over rice and top with sauce, cashews and green onion.
